Introducing one of our breakfast favorites: Oatmeal Spice Muffins!
It's a cross between a fluffy breakfast muffin and spicey holiday treat. Enjoy!
Ingredients & Directions
1C Christine & Rob’s Oatmeal
3/4 C Milk
1 Egg
1/4 C Butter, softened
1/2 C Raisins
1 C Flour
1/3 C Brown Sugar
3/4 tsp. cinnamon
1/4 tsp. allspice
1/4 C Chopped walnuts
2 1/2 tsp. baking powder
1/4 tsp. Salt
Preheat oven to 400 degrees. In a medium bowl combine oatmeal and
milk. Let stand for about 10 minutes. Beat egg and butter then mix
raisins. In a large bowl combine flour, spices, baking powder, salt and
walnuts. Add oatmeal mixture, mixing just until dry ingredients are
moistened. Fill greased muffin tins about 2/3 full. Bake 20-25
minutes. Makes 1 dozen muffins.
